Can you thicken coffee for a dysphagia diet?

Yes — hot drinks including coffee can be thickened to the prescribed level with a commercial thickener. Xanthan-based thickeners are generally more stable in hot drinks; starch-based ones keep thickening as they stand. Always verify the result with the 10 mL syringe flow test before serving.

Follow the manufacturer's IDDSI dosing chart for the prescribed level, mix thoroughly, and wait the time the chart specifies before testing — some thickeners need a few minutes to fully develop.

Temperature matters: a drink that tested right when hot may be thicker once it cools. Test at serving temperature.

Remember: we never recommend a diet level. Serve only what matches the IDDSI level prescribed by your speech-language pathologist.
