Maple Brown-Sugar Breakfast Oats

The family’s version

  • Steel-cut oats
  • Brown sugar
  • Toasted pecans
  • Cream

The Level 4 version

  • 50 g rolled oats
  • 250 ml whole milk
  • 1 tbsp maple syrup
  • Pinch of cinnamon
  1. Simmer oats in milk until very soft, about 10 minutes.
  2. Blend until completely smooth — no visible oat flecks.
  3. Stir in maple syrup and cinnamon. The sweetener goes in after blending so you can adjust without re-blending.
  4. Cool to eating temperature; check with the spoon tilt test. If it loosened, a teaspoon of commercial thickener brings it back.
  5. Skip the pecans for the Level 4 plate — toast them for the rest of the table.
