Lemon Butter Salmon Dinner

- Pan-seared salmon
- Steamed broccoli
- Rice pilaf
The Level 6 version
- 140 g salmon fillet
- 100 g broccoli florets, steamed very soft
- 120 g well-cooked mashed-texture rice or soft polenta
- 2 tbsp lemon butter sauce
Convert it
- Poach or bake the salmon gently until it flakes — avoid searing, which creates a tough crust.
- Steam broccoli past “crisp-tender” to genuinely soft; stems should squash under a fork.
- Swap rice pilaf for soft polenta or well-moistened mashed potato — plain rice scatters and is hard to control.
- Cut everything to 1.5 cm pieces (about the width of an adult thumbnail).
- Dress generously with lemon butter so every bite is moist. Fork-pressure test a piece of each component.
