Lemon Butter Salmon Dinner

6

Level 6Soft & Bite-Sized · 25 min · serves 1 + the family

The family’s version

  • Pan-seared salmon
  • Steamed broccoli
  • Rice pilaf

The Level 6 version

  • 140 g salmon fillet
  • 100 g broccoli florets, steamed very soft
  • 120 g well-cooked mashed-texture rice or soft polenta
  • 2 tbsp lemon butter sauce
  1. Poach or bake the salmon gently until it flakes — avoid searing, which creates a tough crust.
  2. Steam broccoli past “crisp-tender” to genuinely soft; stems should squash under a fork.
  3. Swap rice pilaf for soft polenta or well-moistened mashed potato — plain rice scatters and is hard to control.
  4. Cut everything to 1.5 cm pieces (about the width of an adult thumbnail).
  5. Dress generously with lemon butter so every bite is moist. Fork-pressure test a piece of each component.

SLP tipAt Level 6 the knife test is your guide: if it needs a knife, it isn't tender enough yet.

Before serving: run the fork pressure test on the finished plate. Recipes guide you to a texture — only the test confirms it.
