Real Chocolate Pudding

- Chocolate pudding
- Whipped cream
- Chocolate shavings
The Level 4 version
- 500 ml whole milk
- 60 g sugar
- 30 g cornstarch
- 25 g cocoa powder
- 50 g dark chocolate, chopped
- Pinch of salt
Convert it
- Whisk sugar, cornstarch, cocoa, and salt in a saucepan; gradually whisk in milk until lump-free.
- Cook over medium heat, whisking constantly, until thick — about 6–8 minutes after it starts to bubble.
- Off the heat, stir in the chopped chocolate until melted and completely smooth.
- Chill at least 2 hours. Pudding firms as it cools — check the spoon tilt test cold, exactly as it will be served.
- Serve plain or with a smooth fruit purée. Skip whipped cream toppings unless the SLP has cleared them, and never add shavings or cookie crumbles.
