Is applesauce IDDSI Level 4?
Smooth applesauce usually behaves like IDDSI Level 4 (Extremely Thick / Pureed), but it varies by brand and even by cup — watery liquid often separates near the end of a container. Always check with the spoon tilt test before serving, and avoid “chunky” or “homestyle” varieties entirely.
Level 4 foods must be completely smooth and cohesive, with no liquid weeping out. A cup of applesauce that has separated — thin juice pooling on top — can be aspirated like a thin liquid even though the rest of the cup looks safe.
Stir the applesauce first. If liquid still pools, drain it off before serving. Then run the spoon tilt test: it should hold its shape on the spoon and slide off in one cohesive piece.
